Yogurt and Spinach Artichoke Dip
This nutritious artichoke dip, brimming with protein, fiber, and vegetables, offers an excellent option for party appetizers or healthy snacking any day of the week.
Ingredients
- 14oz can of finely chopped artichoke hearts
- 1 cup of full-fat Greek or plain yogurt
- 8oz frozen spinach, thawed, thoroughly squeezed to remove excess water, and roughly chopped
- 2 cloves of garlic, grated
- 100 grams of grated parmesan
- 1/4 cup of finely chopped fresh parsley
- 1/4 teaspoon of salt
- 1/8 teaspoon of pepper
Instructions
For a chilled dip:
- In a spacious bowl, combine artichoke hearts, yogurt, spinach, garlic, parmesan, parsley, salt, and pepper. Mix thoroughly.
- Season with additional salt and pepper to taste, garnish with parsley and parmesan, and serve.
- Store this healthy artichoke dip in an airtight container in the refrigerator for up to 3 days.
For a warm dip:
- Preheat the oven to 350°F.
- In a sizable bowl, combine artichoke hearts, yogurt, spinach, garlic, parmesan, parsley, salt, and pepper. Blend thoroughly.
- Season with additional salt and pepper to taste, and sprinkle an extra layer of parmesan cheese on top.
